Ingredients  🌿 ½ cup unsalted butter, melted ½ cup granulated sugar ½ cup ricotta cheese (drained if very wet) 1 teaspoon vanilla extract 1 teaspoon lemon zest (or orange zest for a sweeter note) ¼ teaspoon salt ¼ cup almond flour (or finely ground oats) ¼ cup all-purpose flour Instructions  🌸 Preheat & Prep  – Preheat oven to 350°F  (175°C). Line a baking sheet with parchment paper or a silicone mat. Mix Wet Ingredients  – In a bowl, whisk together the melted butter, sugar, ricotta, vanilla, and lemon zest until smooth. Incorporate Dry Ingredients  – Add salt, almond flour, and all-purpose flour. Stir gently until just combined (batter will be loose). Shape & Bake  – Drop small  teaspoons of batter onto the prepared baking sheet, leaving at least 2 inches between each cookie (they spread a lot!). Bake  – Bake for 10-12 minutes , until edges turn golden brown. Let cool completely before carefully lifting off the parchment. Enjoy!  These cookies are best enjoyed with tea, fresh fruit, or simply on their own as a light springtime treat! This Lacy Ricotta Lemon Cookies  recipe makes approximately 18-24 cookies , depending on the size of each drop of batter. If you use a teaspoon-sized scoop , you’ll get around 24 smaller cookies , while a slightly larger scoop (about 1.5 teaspoons) will yield 18 crisp, lacy cookies . If the cookies start to soften, pop them in a warm oven (300°F for 3-5 minutes)  to crisp them back up! 🍋 Longer Storage (Up to 1 week): Keep them in an airtight container  with a small piece of dry paper towel  to absorb moisture. Store at room temperature or in the fridge for extra freshness. ❄️ Freezing (Up to 2 months): Place cookies in a single layer  on a baking sheet and freeze for 1 hour. Transfer to a freezer-safe bag or container with parchment between layers.   • Springtime Creativity: Crafting a Fox Suncatcher

    Hello, gardeners! Spring is the season of new beginnings, fresh blooms, and warm sunshine—what better time to plant seeds of creativity with a delightful fox suncatcher craft? Just like our gardens, this craft brightens up any space, reminding us to embrace the beauty of growth and transformation. Foxes symbolize adaptability and resilience, just like the way we learn to pull our weeds and turn challenges into opportunities (seeds). Inspired by our Foxie, our foxtastic suncatcher captures the warm hues of spring, reflecting the joy and gratitude that come with longer days and nature’s colorful renewal. As sunlight filters through its vibrant orange, white, and golden tones, it’s a beautiful reminder of the season’s energy and possibility. This hands-on activity is perfect for gardeners of all ages—whether in classrooms, at home, or as a mindful project to welcome the season. Stay rooted in creativity, confidence, and calm as we guide you through each step of this springtime craft. Step-by-Step Instructions to Make a Fox Suncatcher This adorable fox suncatcher is a fun and creative way to celebrate spring while adding a warm, nature-inspired touch to your window. Follow these easy steps to craft your own! 🌿 Materials Needed: Orange and white tissue paper Wax paper or clear contact paper Black & orange construction paper (for ears and nose) Scissors Glue stick or liquid glue Hole punch String or ribbon White and orange feathers (optional, for decoration) Wooden embroidery hoop (or create a paper ring frame with construction paper) Instructions:🌸 1️⃣ Create the Base If using a wooden embroidery hoop , stretch wax paper over the hoop and secure it with glue. If using contact paper , cut two identical circles (one for the front and one for the back) or create a sturdy ring frame from construction paper. 2️⃣ Prepare the Construction Paper Cut black construction paper into 2 small eyes, a triangle nose. 2 soft triangles for ears Cut orange construction paper into 2 soft triangles (slightly larger than the black for the ears 3️⃣ Arrange the Fox Face Start with an oval shape for the fox’s face  using white tissue paper. Surround the face with orange tissue paper  to create the fur (see photo). Add the black & orange construction paper for the ears  and the two small eyes & black nose at the bottom of the face . 4️⃣ Seal the Design If using wax paper , place another piece on top and gently press to secure the tissue paper. If using contact paper , layer the second piece on top and press down smoothly. 5️⃣ Create the Outer Sunburst Effect Cut orange and white tissue paper into small fan-folded triangles  and arrange them around the edge of the hoop to create a layered effect. Secure them with glue or press between layers of contact paper. 6️⃣ Add Hanging Decorations Use a hole punch  to make small holes at the bottom. Cut string or ribbon  and attach white and orange feathers  (or more tissue paper shapes) to dangle. 7️⃣ Hang & Enjoy! Punch a hole at the top and attach a loop of ribbon or string. Identify and pull your weeds : Recognize the negative thoughts or stresses occupying our minds and consciously release them. Each time we notice a weed, we can replace it with something positive, shifting our focus toward growth and positivity. Talking about our weeds with trusted sources—whether a friend, family member, or professional—can also be incredibly powerful in helping us pull our weeds. Hot sauce (optional) Fresh lime wedges (for drizzling, optional) 🌿 Directions: Prepare the chicken  – If air-frying, season with your favorite spicy rub, cook until crispy, then toss in a little hot sauce for an extra kick! If grilling or baking, season and cook to your preference. Char the tortillas  – For a smoky, restaurant-style finish, carefully char the tortillas over an open flame (grown-up gardeners only!). You can also warm them in a dry pan. This versatile activity is perfect for home, school, or counseling sessions, providing a hands-on approach to embracing the You Are a Gardener® mindset. Materials Needed: Small bag or container Slips of paper with different "gardening tools" written on them (examples below) A space for discussion and reflection Preparation: Write down different coping strategies, positive habits, or mindful exercises on slips of paper. Fold them and place them inside a bag or container. Label the container as the "Gardening Tool Grab Bag."
