- Delicious Simplicity: Sheet Pan Baked Feta & Broccolini
What's Cookin' : Sheet Pan Baked Feta & Broccolini Hello, gardeners! Simple, satisfying and super easy to clean, the sheet pan cooking craze is one food trend we are definitely getting behind. We find these meals are a 'close cousin' to the crock pot with minimal ingredients that yield tasty results. Today we are sharing one of our absolute favorite recipe yet-Sheet PanBaked Feta & Broccolini! There is something for everyone on this sheet pan to enjoy and it serves well over pasta, orzo, farro, with a fresh loaf of bread or as a side dish! <> Sheet Pan Baked Feta & Broccolini ✅ 1-2 Bunches of Broccolini (washed & trimmed) ✅ 1 Pint of Cherry or Grape Tomatoes (cut in half) ✅ 1 Small-Medium Yellow or Purple Onion (cut into small wedges) ✅ One 8 ounce Block of Feta (cut into 1 inch thick slices) ✅ 1 Lemon Cut In Half (cut one half into thin slices) ✅ 1 Tsp Ground Cumin ✅ 2-3 Tablespoons Olive Oil Pre-heat oven to 400. On a sheet pan, mix tomatoes, broccolini, onions, and lemons with olive oil. Sprinkle with cumin, kosher salt and pepper (to taste) and mix again. Gently tuck the feta slices in between the veggies. Roast in the oven for about 20 minutes, and give the veggies a gentle stir about half way through. The broccolini should be tender to touch and the tomatoes should have a nice blister. The cumin is the real star of the show here-it ties all the ingredients together in a sophisticated way. You Are a Gardener® at The Peck School 1/9/25 A Shining School Spotlight: The Peck School Hello, gardeners! Today, we are excited to highlight an incredibly remarkable school in our brand new School Spotlight! We are excited to feature The Peck School in Morristown, NJ. Last week, it was a great pleasure to present our #PullYourWeeds® Assembly to their K-4 students in their Lower School. This opportunity blossomed last spring when a wonderful friend introduced us to Ms. Ashley Tabor, Head of The Lower School, during a collaborative meeting where we discussed how You Are a Gardener® could help nurture seeds of empathy and kindness among their students. The Peck School features a stunning campus characterized by beautiful historical architecture. Founded in 1893, this coeducational independent school places a strong emphasis on character development, which truly resonates throughout their entire community—from their students and educators to their administration . It was a tremendous honor to present at such an outstanding school! We developed a new and customized presentation exclusively for The Peck School, and the response was overwhelmingly positive- see reviews below! Here are some highlights from the #PullYourWeeds® Assembly at The Peck School: All 187 students at The Peck Lower School collected a record-breaking 11 Gardening Tool Badges in only 30 minutes , a first in the history of our #PullYourWeeds® assemblies. (See their record breaking Collector's Sheet below!) We reconnected with Gardener Franny, a student at the Peck School , whom we met during a previous assembly at the Rainbow Montessori School two years ago when she was in preschool! She made a point to reintroduce herself at the end of the assembly. We received encouraging and positive feedback from Ms. Ashley Tabor, Head of The Lower School, and Karen Wasserman, the School’s Psychologist (see below) Each student received a Gardener’s Gratitude Journal with a challenge to write down 3-5 things they are grateful for each day until their journals are full. ( Gratitude is also a wonderfully helpful Gardening Tool we explored during the assembly.) All students took home a "You Are a Gardener" newsletter packet filled with fun resources and activities to help continue the program at home! The Peck Lower School received a private weblink with a wealth of resources , activities, links, visual aids, and more to help keep The You are a Gardener® mindset growing in the classroom. At the assembly's conclusion, Ms. Tabor recognized a couple of students for their acts of kindness in their school's ‘Lift Ticket’ initiative, which celebrates kindness, empathy and doing the right thing by highlighting students who perform these wonderful acts. Hello gardeners! Today, we’re digging deep and uncovering the roots of unkindness. This is a challenge that gardeners of all ages may encounter. Often, when one gardener behaves unkindly, it can stem from their own negative emotions. That’s why it’s essential for us as gardeners to remember not to take unkindness personally when it happens.Instead, we can approach these situations with empathy and understanding.
